Ingredients
- Yield:
 - 2-3
 
Tuna Tartare
- 1/2 Cup diced Tuna
 - 1 Tbsp. small diced Cucumber (peeled & seeded)
 - 1 Tbsp. pickled Red Onion
 - 2 Tbsp. small diced Avocado
 - 2 Oz. Sausalito Watercress (dressed with lemon vinaigrette)
 
Pickling Liquid
- 3 Oz. Rice Wine Vinegar
 - 2 Oz. Sake
 - 1 Oz. Mirin
 - 2 Oz. Honey
 - 1 Tbsp. Salt
 
Lemon Vinaigrette
- 2 Oz. Fresh Lemon Juice
 - 2 Oz. Honey
 - 4 Oz. Olive Oil
 - Salt to taste
 
Preparation

 - 45 Minutes
 
Picking Liquid
- Bring liquid to boil to dissolve salt then pour onto vegetables being pickled
 
Lemon Vinaigrette
- In a blender put juice and honey
 - Slowly drizzle oil to emulsify
 - Hand whisk salt
 
Tuna Tartare
- In a small mixing bowl combine Tuna with Lemon Vinaigrette
 - Place mixture in ring mold
 - Layer Avocado on top, followed by Pickled Red Onion, then Cucumber
 - Add Lemon Vinaigrette to Watercress and toss
 - Place dressed Watercress on top of mold
