Ingredients
- Yield:

Crispy Calamari
- 12 ounces (3/4 pound) frozen calamari rings and tentacles, Aqua Star brand
- ½ cup milk
- 1 cup flour (seasoned with salt and pepper)
- Oil for deep frying
For the dipping sauce
- 1/4 cup mayonnaise
- 1 teaspoon masago (smelt eggs, also called capelin roe)
- ½ teaspoon soy sauce
- ½ teaspoon lemon juice
- ½ teaspoon honey

Crispy Calamari
- Thaw calamari rings by rinsing under cold water
- Marinate calamari in milk for 30 minutes
- Drain calamari
- Put flour in a shallow pan and season with salt and pepper
- Dredge the calamari in the flour; shake off any excess
- Heat the oil in deep-fryer or a deep pot to 350 degrees
- Deep-fry the calamari until crisp and golden brown
- Drain on paper towel
Dipping sauce
- Mix all the ingredients for the dipping sauce together in a bowl
Garnish
- Wash the whole –leaf lettuce
- Cut lemon into wedges
Presentation
- Serve calamari on platter garnished with the whole-leaf lettuce
- Place lemon wedges next to calamari
- Divide dipping sauce in 4 small bowls
