In the winter months when the water is ice cold is the perfect time to enjoy fresh shellfish. When everyone else is braising beef for stews to have with deep red wines, I love to switch it up and enjoy a nice Pinot Gris with this pacific seafood stew. The sweetness of the pacific honey mussels and the little neck clams goes great with the wine and the butteriness of the scallops and rich cream sauce base warm the soul on even the coldest and rainiest West Coast Winter Nights.
