Summer Soup Recipes

Do something a little different when you're entertaining this summer and serve a refreshing chilled soup as your warm-weather appetizer. Here, we ask our chefs to provide us with some unique and easy-to-prep summer soup recipes. Which one will you be trying? 

Chilled Spring Green Pea and Smoked Bacon Soup

This is a lovely summertime recipe with a Chicago twist, that’s sure to get some attention at your summer BBQ. To enhance the sweet and savory element of the soup, we add some local crumbled popcorn, which also adds a nice crunch.

Ajo Blanco, White Gazpacho

During the summer season, Executive Chef Brian Armstrong loves to create light and refreshing soups that pair perfectly with warmer weather. The Ajo Blanco, or White Gazpacho, is a delicious cold soup that is easy to create at home for the family or while entertaining guests. Chef Armstrong uses olive oil from the local Texas Olive Ranch for a uniquely authentic flavor.  

Chilled Papaya Soup with Maui Gold Pineapple, Kula Lavender Honey and Lime

Executive Chef Tylun Pang developed this chilled soup to refresh guests in the hot Hawaiian climate. The soup includes locally-sourced papaya, pineapple, honey and mint, but can be made with the same ingredients in other regions. Chef Pang typically serves this special dish at family gatherings and during the holidays. 

White and Green Gazpacho

A delicious, cold soup, perfect for summer, this gazpacho is a particularly refreshing option after a day at our resort by the Outaouais river, or in your own backyard at home.

Cold Arugula Soup With Mozzarella and Cherry Tomato

Strawberry Gazpacho
