Garden Pea Bisque

• • 1 lb Peas
  • 1 Onion, Chopped
  • 1 Tsp Sugar
  • 1 Tbsp Butter
  • 1 Leek, Chopped
  • 1 Tbsp Mint Chiffonade
  • 1 Tsp Lemon Juice
  • 1 L Chicken or Vegetable Stock
  • Salt and Pepper

1. 1. Sweat onions and leek in butter over medium heat - do not brown.
   2. Add peas, sugar, lemon juice, cooked onions and leeks to blender - purée until smooth.
   3. Add chicken stock in increments to achieve desired consistency.
   4. Add salt and pepper to taste.
   5. Garnish with fresh mint.
   6. This soup can be served hot or cold. Reheating of soup will cause it to lose its vibrant color.
