Spiced Apple Cider

Ingredients

• Spiced Apple Cider

  • 1.5 oz Aged Rum
  • 5 oz Organic Apple Juice
  • 0.5 oz Fresh Lemon Juice
  • 0.5 oz Spiced Demerara Syrup

• Spiced Demerara Syrup

  • 500 grams Demerara / Turbinado Sugar
  • 500 ml Filtered Water
  • 1 Piece Ginger, Peeled and Chopped
  • 6 Whole Cloves
  • 6 Allspice Berries
  • 1 Pod Nutmeg, Grated
  • 2 Star Anise Pods
  • 3 Cinnamon Sticks
  • 1 Apple, Peeled and Sliced
  • 1 Orange Sliced

1. Spiced Demerara Syrup

   1. Combine ingredients in a sauce pan and simmer on low heat for 20 minutes.
   2. Strain out solid material and bottle. Syrup will keep for one week.

2. Dried Apple Slices

   1. Lightly brush fresh apple slices with Spiced Demerara Syrup.
   2. Place over parchment paper on a baking sheet and bake at 150°F for 12 hours.

3. Spiced Apple Cider

   1. Combine all ingredients in a saucepan and heat over medium heat until desired temperature is achieved.
   2. Serve in a tea cup with spices and dried apple slices.
