Pear Shrub Preparation
Mix together the pears and sugar set a side in a cool place for three days. Place the pear and sugar mixture over the stove on low heat and stir until the sugar has dissolved. Remove from the stove and strain out the pears. In a container with a lid combine the strained pear mixture and vinegar. Refrigerate for at least three days and up to one month.
Cocktail Preparation
Combine all ingredients except the bitters in a mixing glass and shake vigorously. Pour into a Martini glass and add a dash of bitters. Garnish with a dried pear chip.
