Information: Why do our bodies need antioxidants?  Perhaps we should first examine what exactly an antioxidant is.  Antioxidants are molecules capable of slowing down, and in some cases preventing, the oxidation of other molecules.  Oxidation, a chemical reaction in the body produces what are known as free radicals, agents that start the chemical reactions that damage cells, and in many cases cause disease – the most common being cancer.  Clearly, antioxidants are important. Thankfully, they can be found in abundance in many of the foods we eat – fruits, vegetables and tea! Interestingly, research is also indicating that the high levels of antioxidants found in luxury green and white teas appear to be a particularly strong class of antioxidants compared to other types of antioxidants.

Over the last few years, much research has been conducted in the realm of tea (Camellia sinensis) and antioxidants.  The good news?  Many teas exhibit exceptionally high antioxidant counts and as such work hard to limit the cell damaging behaviors of free radicals in the body.  This research confirms that green and white teas appear to provide the largest antioxidant boost.  

Independent research, conducted at the University of Toronto Bioindustrial Laboratory in Canada takes this one step further.  Confirming what many tea producers speculated about for years, scientists determined that teas grown at higher altitudes (4000 - 8000 ft above sea level) pack even more antioxidants per leaf than those grown lower down.  It is believed that the combination of intense sunlight, good drainage and pure air found at these altitudes produce an antioxidant rich leaf.  Fairmont High Antioxidant Blend capitalizes on these findings by blending three leaf varieties from two of Africa’s premiere high-altitude estates, Kosabei in Kenya and Satemwa in Malawi. Together, these three teas - two green and one white - combine to produce a wonderfully round cup with one of the highest naturally occurring antioxidant counts found in commercially available teas – a stunning blend.


Hot tea brewing method:  Bring freshly drawn cold water to a rolling boil. Place 1 teaspoon of tea or 1 teabag for each 8 ounces of fluid volume in the teapot. Pour the boiling water into the teapot. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea). This tea is best when consumed without milk or sugar. 

Iced tea-brewing method:  (to make 1 liter/quart):  Place 6 teaspoons of tea or 6 teabags into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water].
