Fairmont Food Lab Goes Asian

Bending Traditions in the Kitchen

It is no secret that the American food scene has been heavily influenced by Asian flavors and cuisine over the past decade. More and more, we are seeing new Thai, Japanese, Korean and Filipino restaurants opening, as well as finding these flavors and dishes pop up on a growing number of menus. American diners are becoming far more familiar with the likes of Xiao Long Bao and XO Sauce than ever before.

So how does Fairmont Austin’s culinary team differentiate themselves while still staying true to tradition and authenticity of these incredible ingredients and flavors? By putting together a group of chefs with international palates and varying experience in kitchens from around the world.

And the results? Dishes such as Ramen inspired deviled eggs (think ajitsuke tamago style eggs made with a ramen reduction and bonito mayo, topped with koji dust and a quickle) and bánh mì inspired chicken liver tartine (a sharable tartine dish with house-made chicken liver mousse and traditional Vietnamese herbs).

These shareable bites will be served in Fulton Bar, while Revue will feature an entire kitchen dedicated to Asian inspired dishes and flavors.
