This is a slightly altered recipe that I have permanently borrowed from my sister, any good chef is a clever thief. I think the original recipe was from an old collection possibly from Canadian Living or Chatelaine. My sister makes this in the early summer with fresh rhubarb which is beyond awesome. The best part about this recipe is you may substitute any fresh fruit based on the season. Fresh apples in the fall are perfect, berries in the spring, stone fruit in the summer. Serve the cake warm with generous amount of compote and cream and you have a winner for dessert. It is beyond easy as well, a winning combination.
