Bacci's Secret Pizza Dough Recipe

Ingredients

Yield:

2 10" pizza bases

• • 160 ml water
  • 4.8 gr yeast
  • 6.4 gr sugar
  • 5.6 gr salt
  • 20 gr olive oil
  • 72 gr semolina flour
  • 224 gr flour

1. 1. Preheat oven to 425 F.
   2. Mix all ingredients in standing mixer with dough hook until it has reached the desired consistency.
   3. Separate into 6 oz portions using a scale.
   4. Let rest on sheet pan in refrigerator for 1 hour to proof.
   5. Roll the dough using rolling pin or hands, until the dough is 10 - 12 inches in diameter.
   6. Put the desired toppings (sauce, cheese, etc.) and bake for 6 minutes at 425 F. Buon appetito!
