Chef Anthony Hsia’s Grilled Cheese Sandwich with Autumn Apples
Fontina and Swiss/Gruyere Cheeses are rich, full flavored cheeses that are quite strong on their own. When apples are picked at their prime, in season, the sugars and acids and cell structure are bright and firm. Most of the time, when you get through just ½ of a grilled cheese sandwich, you taste buds actually get quite bored and saturated with cheese, and you usually leave the other half unfinished. With my recipe, there is a contrast in flavor, and in texture.
