Earl of Persimmon

Ingredients

• • 1 oz Fairmont Earl Grey Tea (brewed double strength and chilled)
  • 1 ½ oz Korbel Brandy
  • 1 oz half and Half
  • 1 Oz Chilled Persimmon Puree

• Persimmon Puree

  • 4 Fuyu Persimmons
  • 1 stick Cinnamon
  • ½ tsp Vanilla
  • ¼ tsp Nutmeg
  • 2 pieces Lemon Zest
  • 1 oz Lemon Juice

1. Persimmon Puree

   1. Cut Persimmon into bite size pieces and stew over very low heat for 15 minutes
   2. Add all spices and cook for 15 minutes more
   3. Strain through a sieve
   4. Chill and keep in the refrigerator for up to 10 days.

2. Earl Persimmon

   1. Combine ingredients in a shaker tin
   2. Fill with ice
   3. Shake vigorously to combine and form a creamy froth
   4. Strain into a chilled martini glass
   5. Garnish with grated nutmeg, Length of Lemon zest and a dried Persimmon wheel (optional if available)
