Texas Chocolate Catalan

Ingredients

• Chocolate Catalan

  • 3 1/2 cup heavy cream
  • 1 cup milk
  • 1 tsp vanilla
  • 1 1/2 cup sugar
  • 15 large egg yolks
  • 1 cup dark chocolate

• Garnish

  • 1/4 cup toasted pecans
  • 1 cup whipped heavy cream
  • 12 hulled strawberries
  • Sugar to caramelize Chocolate Catalan

1. Chocolate Catalan

   1. Preheat oven to 300 degrees Farenheit.
   2. Bring heavy cream, milk and vanilla to simmer in a medium size sauce pot.
   3. Whisk yolks and sugar in small bowl.
   4. Pour hot liquid into yolk mixture to temper.
   5. Add chocolate and whisk till smooth.
   6. Strain.
   7. Pour into desired ramekin or oven safe bowl.
   8. Bake for 35-45 minutes in a water bath. Chill.

2. To Serve

   1. Sprinkle sugar atop and burn carefully.
   2. Finish with strawberry and pecans.
   3. Add whipped heavy cream.
