Peach & Bourbon Barbecue Sauce

Ingredients

• • 8 Large Yellow Peaches Peeled and Pitted
  • 5 Large Ripe Beef Steak Tomatoes, Stem Removed
  • 1 Large White Onion, Peeled & Diced
  • 2 Large Red Bell Peppers, Seeded and Diced
  • 2 Large Poblano Peppers, Seeded and Diced
  • 5 Large Jalapeño Peppers, Seeded and Diced
  • 4 Gloves Garlic Peeled and Crushed
  • 2 Cups White Sugar
  • 1 Cups Pineapple Juice
  • 2 Cups Bourbon
  • 1 Cup of Apple Cider Vinegar
  • 1 (7.5 oz.) Can Chipotle Peppers
  • 1 (6oz) Can Tomato Paste
  • 2 Tbsp. Smoked Paprika
  • 1 Tbsp. Extra Virgin Olive Oil
  • 1 Tbsp. Mustard Seed
  • 1 Tbsp. Coriander Seed
  • 1 Tbsp. Kosher Salt
  • 1/2 Tbsp. Ground Ginger
  • 1/2 Tbsp. Ground Cinnamon

6 HoursSimmer sauce for 6 hours

1. 1. Heat olive oil in a Large Stock Pot
   2. Add peaches, tomatoes, peppers & garlic and sweat for 5-10 minutes or until vegetables start to color
   3. Add remaining ingredients and bring to a light boil stirring frequently
   4. Reduce heat and simmer sauce for 6 hours stirring occasionally
   5. Using a stick blender puree until smooth
   6. Pass through a Fine China Cap
   7. Cool and Enjoy!
