June is #nationalpollinatormonth! About 75% of all flowering plant species (including our beloved vitis vinifera (wine grapes)) need pollinators for reproduction. As a result, pollinators contribute to ecosystem health and a sustainable food supply. Did you know that the resort keeps both honey as well as pollinator bee hives? HOUSE-HARVESTED HONEY ON THE MENU The Fairmont Sonoma Mission Inn & Spa (honey) beehives produce approximately 250 pounds of honey which is served to hotel guests as part of the resort’s commitment to offering local, organic, sustainable cuisine. This house harvested honey is used in soups, salad dressings, pastries, ice cream and showcased on the Michelin-rated Santé menu.
