Peach Sangria Sorbet Push-Ups

• • 1500 grams peaches
  • Zest and juice of 1 orange
  • Zest and juice of 1 lemon
  • 300 grams water
  • 700 grams sugar
  • 5 grams sorbet stabilizer
  • 2 grams citric acid
  • 4 cinnamon sticks
  • 8 cloves
  • 1 vanilla bean
  • 1 bottle white wine (750 ml)
  • 80 grams peach liqueur

1. • Cook fruit with all ingredients except peach liqueur until soft
   • Blend mixture, strain and add liqueur. Freeze in an ice cream machine and then pipe into push-up molds.
   • Freeze.
