Molinari Flatbread

Ingredients

4 flatbreads

• • 4 cups bread flour (preferably Italian-style "00")
  • 4 teaspoons kosher salt
  • 2 teaspoons instant yeast
  • 13 ounces water
  • 2 cups marinara sauce
  • 12 ounces molinari brand soppressata, sliced thin
  • 1 cup shredded mozzarella
  • 1/2 cup graded parmigiano-reggiano
  • extra virgin olive oil

1. 1. Combine the flour, salt and yeast in a small bowl and mix to incorporate.
   2. Add water and mix by hand.
   3. Cover the bowl with plastic wrap and let sit in a warm area in the kitchen for 4-6 hours.
   4. Preheat oven to 450 degrees Fahrenheit. If using, place pizza stone on middle rack.
   5. Lightly dust a work space with flour and turn the pizza out of the bowl on to the surface. Portion dough equally into 4 balls.
   6. Roll out the pizza dough on the surface to desired thickness. Keep remaining dough covered with a damp paper towel to prevent drying out.
   7. Lightly dust a pizza paddle with flour and place dough on top.
   8. Top with 1/2 cup marinara sauce, 1/4 cup shredded mozzarella, 1/8 cup parmesan and 3 ounces soppressata.
   9. Drizzle with extra virgin olive oili and gook for 6-8 minutes.
   10. Repeat steps with remaining dough.
