Growing up in the UK, Chef John Cordeaux has childhood memories of his mum making Welsh Rarebit, a savory cheese sauce served with sliced bread. “Mum used to make rarebit to clean out the breadbox. She used whatever we had in the pantry,” says Cordeaux. Upon arriving in the Midwest, Chef knew the Rarebit he was so fond of would be a classic match with Wisconsin Cheddar and Craft Beers.
