Short Ribs in Salsa Brava

• • 2 lbs bone in short ribs(divided into 8oz portions)
  • 16 oz can pinto beans
  • 1 quart beef broth
  • 1 cup Modelo
  • 1/4lb diced bacon
  • 2 whole tomatoes
  • 2 jalapeno peppers
  • 3 cloves of fresh garlic
  • 2T freshly squeezed lime juice
  • 2 sprigs of cilantro
  • 2 Radish cut in quarters

1. 1. In a heavy bottom pot sear the short ribs until golden brown, once golden brown remove the short ribs the pan and set aside.
   2. Add the bacon and rendered until crispy, once crispy add the tomatoes, jalapenos, onions, garlic and cook until jalapenos are nice and soft.
   3. Add the beer and reduce by half.
   4. Add the bacon, short ribs , beans and stock.
   5. Bring up to a boil and cover, place the pot in a 350 degree Fahrenheit oven and cook for 2 hours.
   6. Take out, add the lime juice, radish and sprig of cilantro.
   7. Serve as desire, this braise goes perfect with corn tortillas (and the rest of that Modelo).
