Churrasco style grilled top sirloin, Biro biro rice, Black bean stew, Gaucho sauce

Ingredients

• Top Sirloin

  • 500g top sirloin
  • Sea salt

• Gaucho Sauce

  • 1 onion
  • 2 red chilli
  • 100 ml red wine vinegar
  • 10 gr parsley
  • 100 ml olive oil

• Biro Biro Rice

  • 3 eggs
  • 300 gr Basmati rice (cooked)
  • 50 gr green onion
  • 50 gr butter
  • Salt and pepper to taste
  • 200 gr shoestring fries (for serving)

• Black Bean Stew

  • 250 gr black beans
  • 2 bay leaves
  • 1/2 medium onion cut in half
  • 100 gr beef bacon (chopped)
  • 50 gr garlic (minced)

1. Top Sirloin

   1. Season the beef with the sea salt
   2. Grill over gas or charcoal (recommended) slowly for 20 minutes

2. Gaucho Sauce

   1. Combine all the ingredients in a blender
   2. Serve cold as a tasty accompaniment to the grilled meat

3. Biro Biro Rice

   1. Melt the butter in a non stick frying pan add the eggs and season
   2. Fry until they become like omelets, add the cooked rice, 2/3rds of the green onions, and salt and pepper to season
   3. Mix together and serve
   4. Garnish the rice with shoestring fries and the rest of the green onions

4. Black Bean Stew

   1. Soak the beans, bay leaves and 1/2 medium onion overnight, just covered in water
   2. The next day, bring the ingredients to a boil, reduce to a simmer and cook until tender
   3. Fry the beef bacon until crisp, add the chopped onions and garlic and cook together briefly
   4. Add the cooked black beans
   5. Remove the half onion and bay leaves
   6. Simmer for another 20 mins
   7. Season to taste and serve
