Fairmont Fujairah Beach Resort' Lamb Maklouba Secret Recipe

Our Executive Sous Chef Rober Salloum is sharing the secret recipe of his signature dish, Lamb Maklouba. You can enjoy cooking it at home or you can try it at Canvas Restaurant.

Lamb Maklouba Recipe
Serve for: 6 people
Prep time: 45 minutes
Cooking time: 3 Hours


Lamb Shank Ingredients:

2 kg lamb shank
3000 ml water
50 gr ghee
20gr salt
10gr black pepper Crushed
aromatic vegetables (3 Onion, 3 Carrot, 1 leek, 2 celery sticks, 6 garlic cloves)
aromatic Bouquet (2 bay leaf, 5 Cardamom, 2 Cinnamon, 5 g Carnival)

Rice Ingredients:

1 kg rice, basmati
150 gr onion, chopped
50 gr ghee
1500 ml lamb stock
20 gr salt
10 gr nutmeg Crushed
10 gr black pepper Crushed
10 gr al tahi spice
1000 gr slices of fried eggplant
60 gr nuts, toasted (pine seeds, almond, pistachio)

How to Prepare:

-Season the lamb shank with salt and pepper.
-Add ghee into the cooking pots
-Add the lamb shank and cook it in the ghee till the color turns brown.
-Add the aromatic vegetables.
-Add the aromatic bouquet and water.
-Cover the pot tightly and cook the meat over medium heat for two and half hours. Braise the meat until they fall-off-the-bone tender.

-Strain the lamb stock around 1.5 Lt for the rice
-Place the remaining broth on low heat until it cools to form a sauce.

-Add the ghee into cooking pots on medium heat; leave the ghee till gets melted.
-Add the onion.
-Add half the amount of fried eggplant.
-Add the rice, stir for two minutes, then add the meat broth and season with salt, pepper, nutmeg.
-Cook the rice till the water becomes to the same level.
-Cover the pot tightly and cook for 15 minutes in low heat.

-Pour the rice into a dish and arrange the remaining eggplant over the rice. Add the meat, then decorate with toasted nuts and pour a little sauce over it.
