Roasted Turkey Gravy

• Gravy Ingredients

  • 25g butter
  • Turkey bones, rinsed
  • 3 celery sticks, roughly chopped
  • 2 carrots, roughly chopped
  • 1 onion, roughly chopped
  • 3 fresh bay leaves
  • 8 black peppercorns
  • 1.5 l water
  • 3 tbsp plain flour
  • 150ml dry white wine

1. Gravy Preparation

   1. Roast the bones in oven until golden brown.
   2. Melt the butter in a large pan over a medium heat.
   3. Add vegetables in pan until golden brown.
   4. Add turkey bones, bay leaves, peppercorns, and 1.5 litres of water.
   5. Bring to boil and simmer for 1 hour.
   6. Strain the stock into a jug. Set aside to cool slightly, then discard the fat from the surface.
   7. Place your turkey's roasting tin on the hob over a medium-high heat.
   8. Add flour & stir for 1 minute.
   9. Gradually stir in the wine, bring to the boil, and reduce by half.
   10. Add the set-aside stock and any of the turkey's cooking juices and bring back to the boil.
   11. Reduce to a simmer for 15 minutes, to thicken.
   12. Discard any remaining fat from the surface, then season.
