Method Combine the flour and ground almonds in a bowl and set aside. In a separate bowl mix the sugar and butter together, add 1 egg and mix well, add half of the flour and ground almonds mix and combine add the second egg and the remaining flour mix and combine until homogenized, ensure you don’t have lumps of butter. Peel and core the apples and cut them in thick wedges, set them aside. Baked Meringue Mushrooms Egg whites, 100gr Granulated white sugar, 200gr Method Those can be made ahead of time. Combine the egg whites and sugar in a bowl and warm them on top of a double boiler, (Bain Marie), once the mixture is hot to the touch, with an electric mixer beat at high speed until you have a thick meringue. Place the meringue in to a pastry piping bag and with a plain round nozzle on a baking cookie sheet make the base of the mushroom pressing into the sheet and lifting to make a small cone, to make the head of the Mushroom, just make a round ball shape. Bake at 200 degrees Fahrenheit until dry. Store them in an airtight container.
