  • 106gr Butter
  • 85gr Black Sugar
  • 85gr Granulated Sugar
  • 3gr Salt
  • 50gr Whole Egg
  • 5ml Vanilla Extract
  • 30gr Old Fashioned Oats
  • 180gr AP Flour
  • 3gr Ground Cinnamon
  • 85gr Pecan Nut Chopped
  • 160gr Mexican Chocolate Bar (Chocolate Abuelita) Coarsely Chopped
  • 5gr Baking Soda
  • Color Chocolate Chips for Décor
  • Mexican Chocolate Finely Grated for decor

1. Preparation

   1. Preheat oven to 325 degrees F.
   2. Line 2 baking sheets with parchment paper.
   3. Finely chop the oats in a food processor.
   4. Transfer the oats to a medium bowl.
   5. Mix in the flour, cinnamon, baking soda, and salt.
   6. Set aside.
   7. Using an electric mixer, beat the butter and sugars in a large bowl until fluffy.
   8. Beat in the eggs and vanilla.
   9. Add the flour mixture and stir just until blended.
   10. Stir in the pecan nuts and Mexican chocolate.
   11. For each cookie, drop 1 rounded tablespoonful of dough onto sheet, spacing 1 inch apart.
   12. Decorate with Color Chocolate Chips and grated Mexican Chocolate.
   13. Bake until the cookies are golden, about 15 minutes.
   14. Cool the cookies on the baking sheets for 15 minutes.
   15. The cookies can be prepared 1 day ahead.
