Lime Tonic Popsicle Mousse

• Mousse / Siphon 1 L

  • Tonic Water / 60 cl
  • Lime Syrup / 8 cl
  • Jelly sheets/ 6 units
  • Egg White / 5 units

• Gin Tonic Popsicles

  • Gin/ 1 Oz
  • Tonic Water / 3 Oz
  • Lemon Zest

1. Tonic Mousse

   1. First, pour the tonic water in a bowl, on a boiling point, and at the same time, but in another bowl with water, put the jelly sheets to make them soft.
   2. Then, softly put the jelly in the tonic water, mix them and add the lime syrup.
   3. Keep it chill.
   4. Finally, add the egg white to the mix and put inside the siphon, for this one we need 2 CO2 tube.
   5. Keep it in the fridge and the tonic water mousse is ready.

2. For the popsicle

   1. First mix the gin with tonic and put it on a mold, keep them on the freezer for six hours.
   2. Serve the popsicle on a martini glass, filled with the mousse, and garnish with a leaf of mint and lemon zest.
