Pizza Al Pastor

Ingredients

Yield:

1 Pizza

• Marinated Pork (Pastor)

  • 3 oz. Pork strips
  • 4 oz. Guajillo chili
  • 2 oz. Onion
  • 2 pcs. Garlic
  • 1 tsp. Cumin
  • 2 oz. Axiote paste
  • 2 oz. Orange juice

• Fried Black Beans

  • 8 oz. Black beans
  • 3 pc. Onion
  • 1 pc. Garlic
  • 2 pcs. Epazote leaves

• Pizza Base

  • 1 pc. Pizza dough
  • 2 oz. Lentils
  • 2 oz. Mexican shredded cheese
  • 2 oz. Marinated pork
  • 1 oz. Grilled pineapple
  • 12 oz. Brown onion
  • 5 pcs. Cilantro leaves

1. Black Beans Preparation

   1. Fry the onions, bacon and garlic until it turns brown.
   2. Mix the black beans and add water until all the ingredients are covered.
   3. Cook the epazote on the side for two hours.
   4. Blend all the ingredients, fry them and sprinkle some salt.
   5. Cut the pinapple in small cubes and grill them.

2. Marinated Pork preparation

   1. Mix all the ingredients and cook them for 20 minutes, then blend the mix.
   2. Season with salt and pepper.
   3. Cut some slices of onion and sauté them.
   4. Marinate the pork for 90 minutes, then grill it until cooked.

3. Pizza base

   1. Pre cook the dough.
   2. Spread the beans even.
   3. Add the cheese on top.
   4. Bake for 15 minutes and voila!
