Fairmont Le Château Montebello’s BBQ Pork Chop

Ingredients

• • ½ Diced onion
  • 6 oz Whisky
  • 8 Half BBQ-charred tomatoes
  • 1 Roasted head of garlic
  • 1 Cup of veal jus
  • 3 Tbs maple syrup
  • 2 Sprigs of rosemary
  • 4 Pork chops bone-in

1. 1. On a hot BBQ, char tomatoes until the skin is burnt, then peel the skin.
   2. Caramelize the onions in a pan with a little oil and deglaze with whisky, add the charred tomatoes and the remaining items.
   3. Purée all ingredients in a blender, Brush pork chops with sauce and store in fridge for 24 hrs.
   4. Keep the remaining sauce to add once you serve the pork chops the next day.
   5. Grill pork chops on the BBQ to your liking; serve with your favorite vegetables and the sauce.
