Ingredients:

• 15 gr. onion Shallot
• 10 gr. olive Oil
• 2 gr. garlic
• 50 gr. cream
• 2 gr. salt
• 1 gr. pepper
• 20 gr. brandy
• 15 gr. cheese Gruyere
• 15 gr. bread Crumbs
• 3 ea. oysters
• 50 gr. spinach
• 30 gr. lemon


Preparation:
• Add butter to a warm pan. Sauté the shallot for 2 minutes, then add the spinach and sauté for 2-3 minutes.
• Add the cognac, reduce to dry; then add the cream and reduce by 75%.
• Open oysters and loosen the oyster from its shell.
• Rinse the shell thoroughly, and place the oyster back in its shell.
• Top the oyster with the spinach mixture, sprinkle with cheese and bread crumbs and bake for 3 minutes.
• Served with lemon, on a black plate.
