Sweet and Spicy Pork lettuce wraps

Ingredients

Yield:

6 to 8 wraps

• Spicy Pork Filling

  • 1 teaspoon sesame oil
  • 1 pound ground pork
  • 1 shallot, diced
  • ¼ cup red bell pepper, diced
  • ¼ cup water chestnuts, diced
  • 1 garlic clove, minced
  • 1 tablespoon of red pepper flakes
  • 2 tablespoons of Sriracha sauce (to coat the finished pork filling before serving)
  • 1 teaspoon sesame oil

• Quick Pickled Cucumber

  • English cucumber
  • 3 tablespoons sugar
  • 1 tablespoon salt
  • ¼ cup white wine vinegar

• Spicy Cashews

  • 3/4 cup sugar
  • 1 tablespoon kosher salt
  • 1 tablespoon chili powder
  • 2 teaspoons cayenne pepper
  • 1 large egg white
  • 4 cups cashews

• Sweet and Spicy Sauce

  • ¼ cup freshly squeezed orange juice
  • ¼ cup brown sugar
  • ½ tsp freshly grated ginger
  • ¼ cup rice wine vinegar
  • ¼ cup soy sauce

1. Spicy Pork Filling

   1. Heat 1 teaspoon of sesame oil in a skillet over medium-high heat
   2. Sauté the shallots until they become translucent. Add red bell peppers while stirring occasionally until they become soft (about 5 minutes.)
   3. Add garlic and stir before adding the ground pork. Continue to cook until the pork is browned
   4. Add the salt and red pepper flakes
   5. While the pork is browning, put all ingredients for the sweet & spicy sauce into a bowl and whisk until everything is incorporated
   6. Once the pork is fully browned pour the sweet & spicy sauce into the pan stirring until all liquid has reduced
   7. Add the water chestnuts and for the last finishing spicy touch, pour in the 2 tablespoons of Sriracha sauce and stir until all of the ground pork is coated
   8. Cool and serve with lettuce leafs for wrapping

2. Quick Pickled Cucumber

   1. Using a mandolin cut the cucumber into uniform round slices
   2. Sprinkle the cucumbers with sugar and salt and toss gently to combine
   3. Add the vinegar, stirring to coat all cucumber slices
   4. Let sit about 20 minutes before serving

3. Spicy Cashews

   1. Preheat oven to 300
   2. In a large bowl whisk egg white until frothy. Add the raw cashews and stir to coat
   3. Combine the sugar and spices and then toss with the nut and egg white mixture
   4. Spread the raw cashews on a non-stick baking sheet and bake for 45 minutes, stirring once. Let cool on baking sheet, stirring occasionally
