Honey Mustard Glazed Ham with Parsnip & White Chocolate Puree

• Honey Mustard Glazed Ham

  • 5lbs of smoked, bone-in ham, with rind
  • 1 cup of apple juice
  • 1/4 cup of apple cider vinegar
  • 2 cups of Fairmont Vancouver Airport Honey (alternative honey will work fine)
  • 1/2 cup of brown sugar
  • 1/2 cup of grainy Dijon mustard
  • 4 Tspn of cloves

• Parsnip and White Chocolate Puree

  • 4 lbs of parsnips, peeled and chopped
  • 2 tbls of butter
  • 1 L of milk
  • 10 sprigs of thyme
  • 500 ml of whipping cream
  • 125 g of white chocolate pellets
  • Salt and pepper to taste

1. Honey Mustard Glazed Ham

   1. Pre-heat oven to 225 degrees F
   2. Place all ingredients except ham in a bowl and whisk together
   3. Lay tinfoil down and ham on top
   4. With a small, sharp knife, make incisions to form a cross stitch pattern, only cutting in slightly past rind
   5. Pour ingredients from bowl over ham and wrap in tinfoil, ensuring there are no holes for liquid to escape
   6. Place on tray and bake for 3 hours
   7. Remove ham, and strain liquid into a medium sized pot
   8. Reduce liquid by 3/4
   9. Turn oven to broil setting
   10. Pour reduced liquid over ham and place back in oven to broil
   11. Remove ham when golden brown
   12. Let rest for 10 minutes before slicing

2. Parsnip and White Chocolate Puree

   1. Place parsnips, butter, milk, and thyme in a pot and cover. Simmer over medium heat for 30 minutes
   2. Place cream and chocolate in a bowl
   3. Remove lid from parsnips, and place bowl of chocolate over parsnip pot
   4. Once chocolate has melted, remove bowl and keep warm
   5. Remove thyme from parsnips, and pour into a mixer
   6. Puree until smooth
   7. Add chocolate cream mix to the pureed parsnips
   8. Adjust seasoning by adding salt and pepper to taste
