Warm Chocolate Tart

• Chocolate Pâte Sablée (Tender Tart Crust)

  • 150 g Butter
  • 75 g Icing Sugar
  • 5 ml Vanilla Extract
  • 1 Egg
  • 200 g Flour
  • 30 g Cocoa Powder

• Warm Chocolate Filling

  • 125 g Cream
  • 200 g Chocolate
  • 100 g Butter
  • 2 Eggs
  • 2 Egg Yolks
  • 50 g Sugar
  • Pinch of Salt
  • 20 g Cocoa Nibs
  • Fleur de Sel to Taste

• Madeira Glazed Figs

  • 6 Figs
  • 1/2 cup Madeira Wine
  • 4 tbsp Brown Sugar

1. How to make the Chocolate Pâte Sablée

   1. Cream butter and icing sugar until smooth
   2. Add vanilla and egg and combine
   3. Sift in flour and cocoa powder and form a dough
   4. Divide dough into 6 pieces.
   5. Roll out the dough into 1/4 inch thick circles.
   6. Transfer the dough into individual mini tart pans and set aside.

2. How to make the Chocolate Filling

   1. Simmer cream and butter in a pot, then add the chocolate and remove from heat.
   2. Whisk together in a bowl the eggs, yolks, sugar and salt.
   3. Slowly pour the chocolate into the egg mixture and whisk to combine.
   4. Pour into unbaked chocolate sablée shells, finish with cocoa nibs and fleur de sel. Chill.
   5. Bake for 10-12 minutes at 350 F.

3. How to make the Fig Glaze

   1. Simmer the figs, wine and sugar.
   2. Cook untill the figs are glazed with wine and sugar.
   3. Garnish the tart with figs and sprinkle with icing sugar (optional).
