Peach Pomegranate & Mint Popsicles

• Popsicles

  • 500ml white peach puree
  • 250ml mint infused honey syrup
  • 150ml pomegranate juice + pomegranate seeds
  • 200ml water
  • 25ml fresh lemon juice
  • 2-3 chopped mint leaves

• Mint Infused Empress Honey Syrup

  • 340g Empress Honey
  • 250ml water
  • 5g roof top mint

1. Mint Infused Empress Honey Syrup

   1. Stir ingredients together in a pot
   2. Bring to a boil and remove from heat
   3. Add fresh mint leaves and let infuse for 10-15 minutes

2. Popsicles

   1. Whisk together all ingredients
   2. Pour into popsicle moulds, insert sticks and freeze overnight
