Tomato Tartlet

Ingredients

Yield:

12 tartlets

• Dough

  • 1 cup all purpose flour
  • ¼ tsp kosher salt
  • ¼ tsp sugar
  • 6 tbsp unsalted butter, cut into ½ inch cubes
  • 3 tbsp ice water

• Filling

  • 3 tbsp soft goat cheese
  • 2 tbsp cream cheese
  • 2 tbsp mozzarella cheese
  • 5 ea. sundried tomato
  • 1 tbsp chives, chopped
  • 12 ea cherry tomatoes, sliced to garnish

1. For the Tart Shells

   1. For the tart shells place the flour, salt and sugar in a mixing bowl and cut the cold cubed butter into it with a pastry blender until it is incorporated, then add the ice water and mix gently to form a dough.
   2. Rest the dough in the fridge for an hour.
   3. Remove from fridge and roll out on a floured surface cut into rounds and fill tart moulds.
   4. Bake the tartlets at 350F until light brown.
   5. Remove from oven and cool.

2. For the Filling

   1. For the filling mix the goat cheese, cream cheese and mozzarella cheese with the chopped sundried tomato and chives.

3. Assembly

   1. Pour the tomato and cheese mixture into the tartlet shells and then top with the sliced cherry tomato.
   2. Return the tartlet to the oven for 10 minutes, then remove and serve warm.
