Burrata Caprese Salad

• For the Salad

  • 1 large ball (about 8 ounces) fresh burrata
  • 1 medium Red heirloom tomato
  • 20ml Extra-virgin olive oil
  • 3 leaves fresh basil
  • coarse Fleur de sel
  • 10ml Fresh Pesto Oil
  • 60 grm Arugula leaves
  • 30ml White Balsamic Vinegar
  • 4pcs Italian Bread sticks
  • Crushed Black Pepper
  • 10ml Reduced Balsamic Vinegar

1. 1. Drain the burrata of any liquid, place on a plate and set aside. Do not refrigerate.
   2. Cut the base of the Heirloom and cut the tomatoes into quarters, but not fully
   3. Marinate the Tomatoe with White reduced Balsamic, sugar, crushed pepper and olive oil, set aside.
   4. Place the burrata over the tomatoes and sprinkle with fleur de sel
   5. Add an extra drizzle of olive oil if desired, and crush some black pepper on the cheese.
   6. Add the Italian Bread sticks with some pre-tosssed Arugula with lemon olive oil and seasoning
   7. Drizzle the reduced balsamic and serve
