Mini meatloaf stuffed with cheese curds, homemade plum and apricot BBQ sauce

• • 500 gr lean ground beef
  • 500 gr lean ground beef
  • 50 gr fine chopped onions
  • 50 gr fine chopped celery
  • Italian parsley
  • Focaccia bread
  • 2 garlic gloves
  • 3 Plums
  • 10 dry apricots
  • 300 ml ketchup
  • 50 ml honey
  • 100 ml soy sauce
  • 250 ml apple juice
  • Fresh thyme/rosemary
  • 1 Egg
  • 150 gr cheese curd
  • Salt, pepper

1. 1. Mix the following ingredients together: ground beef, onions, carrots, celery, egg, focaccia, salt and pepper, fresh herbs
   2. In buttered muffin mold, fill halfway with with beef mix and carefully place cheese curd in center and top with more beef
   3. Cook the meat loaf for 15-20 minutes
   4. For the sauce, mix plum, dry apricot, honey, apple juice and cook until reduced. Add ketchup, soy sauce, garlic and cook for 5 more minutes until blended. Pass the sauce through a fine sieve
   5. Serve with fresh vegetables and mashed potatoes.
