A Taste of Brazil to Celebrate Summer - Moqueca de peixe (Brazilian fish stew)

• • 250 g of Red Mullet fillets
  • 200 gr of whiting fillets
  • 4 raw clams
  • 1 cooked octopus tentacle
  • 4 cooked whelks
  • 4 clean prawns
  • 1 big raw calamari
  • 3 potatoes
  • 4 tomatoes
  • 1 onion
  • 1 lime
  • 1/2 lemongrass branch
  • ½ bouquet of coriander
  • ½ head of garlic
  • 600 ml of coconut milk
  • 400 ml water
  • oil
  • salt & pepper
  • 5 g cayenne pepper

1. 1. Clean, sponge and cut the tomatoes.
   2. Peel, mince, dice and cut onion and garlic.
   3. Peel and cut the potatoes.
   4. Add to cooking pot with oil.
   5. Add fish fillets, prawns, clams and a bit more oil.
   6. Add coconut milk & water.
   7. Bring to the boil over low heat while stirring regularly and gently during 15 minutes.
   8. Simmer for another 10 minutes.
   9. Add calamari, octopus, and whelks
   10. Verify seasoning and add the cayenne pepper
   11. Before serving, add a slice of lime, the coriander, and for decoration, the lemongrass.
