Maple and chocolate ice cream cone

Ingredients

• • 500ml. 3.25% milk
  • 375ml. maple syrup
  • 4 egg yolks
  • 55gr. sugar
  • 250ml. heavy cream
  • 600gr. dark chocolate
  • Roasted mixed nuts
  • 10 Ice cream cones

1. 1. Mix the sugar and the egg yolks together for about 2 minutes.
   2. On medium heat, bring the milk and maple syrup to boil.
   3. Add the mix of sugar and eggs yolks to the milk and syrup and cook to 82° C.
   4. When at 82°C, immediately transfer the hot liquid in a another container to cool down.
   5. At this time, add the heavy cream and let cool down in refrigerator at 4°C.
   6. Fill your ice cream machine and let run for 10 minutes. Then keep your ice cream in a freezer for 30 minutes.
   7. Fill the cones and put a generous scoop on top. Put back in freezer for another 30 minutes.
   8. Meanwhile, melt the chocolate in microwave for about 20 seconds.
   9. Dip the cones in chocolate, then in the nuts. Put back in a freezer before serving.
