white chocolate and orange flavored Easter egg with maple crémeux

Ingredients

• White chocolate and Orange biscuit - ingredients

  • 125 gr white chocolate
  • 60 gr butter
  • 3 whole eggs
  • 75 gr sugar
  • 70 gr flour
  • 1 orange zest

• Maple Crémeux

  • 140 gr maple sugar
  • 250 ml milk
  • 250 ml whipping cream 35%
  • 100gr egg yolk
  • 2 gr gelatine leaf
  • 60 gr butter

• Cranberry sauce

  • 500 ml cranberry juice
  • 100 gr sugar
  • 3 gr agar-agar

• Chocolate topping

  • 500 gr 35% cream
  • 130 gr dark chocolate 64%
  • 25 gr inverted sugar syrup

1. White chocolate and Orange biscuit - ingredients

   1. Mix the sugar, melted butter and chocolat in a blender.
   2. Add the floor to the eggs, then the melted white chocolat and orange zest.
   3. Spread the dough to stray with cooking paper.
   4. Cook at 180 C during 14 minutes.

2. Maple Crémeux

   1. Caramelize the maple sugar then decook with the milk and cream.
   2. Add egg yolk and cook to 85 C.
   3. Pass through a sieve and add the gelatine leaf. Add the melted butter.
   4. Let the mix cold down before using it.

3. Cranberry sauce

   1. Cook the cramberry juice and the sugar , then add agar-agar and cook to complete boiling.
   2. Pour into a bowl and let cool down until it gets hard.

4. Chocolate whipped cream

   1. Cook the cream and the inverted sugar syrup then add the chocolate and mix until the texture is homogeneous.
   2. Let sit for 12 hours in the fridge.
   3. Whip vigorously.

5. Dressing

   1. Dispose half a shell of a chocolat egg in the centre of a plate or bowl, dispose the maple crémeux, the biscuit, the cranberry sauce and top with chocolate whipped cream.
