Gingerbread Teddy Bears

Ingredients

Yield:

about 4 dozens cookies

• Ingredients - douch

  • 2 cup unsalted butter
  • 1 cup brown sugar
  • ½ cup molasses
  • 5 cups all purpose flour
  • 4 teaspoon ground all spice
  • 2 tablespoon ground ginger
  • 2 tablespoon cinnamon
  • ½ teaspoon ground clove
  • 1 teaspoon salt
  • 1 teaspoon baking soda

• Ingredients - Icing

  • 4 egg whites
  • 6 cup powdered sugar
  • 1 lemon
  • Food colorants

1. 1. In a stand mixer, combine butter, sugar and molasses and whisk together using the paddle attachment for about 3-4 minutes
   2. Add the dry ingredients (that are mixed together) in small amount, about 1 cup at a time and continue to beat until completely blended
   3. Remove the dough from the bowl and wrap it in plastic wrap and refrigerate for at least 1 hour up to 3 days
   4. Preheat oven at 350 degrees
   5. Cut the dough in 6 to 8 roughly equal pieces. Using a floured rolling pin, roll each dough ball into ¼ inch thickness
   6. Using a cookie cutter cut out your desired shape cookie and place on a parchment paper covered sheet tray
   7. Bake for 10-12 minutes and cool down on a cooling rack. Wait until the cookies are room temperature before decorating with icing

2. Icing - Method

   1. Add all ingredients to a mixing bowl, beat until stiff and glossy using a hand mixer, about 6-8 minutes
   2. Separate into small batch and mix in different food colorant for each
   3. Place into piping bags and create your masterpiece!
